Lettuce Pesto


Lettuce

Have extra lettuce that you aren't sure what to do with it?  Does your family love chip and dip?  Try this simple recipe that requires less effort to make than eat.  Use the pesto as a dip or a sauce along side your favorite dish.  Its both healthy and tasty!

Ingredients
1/2 lbs fresh aragula lettuce
1 1/2 tbsp salt
1 tbsp honey
1 tbsp wine vinegar
4 fresh or roasted peppers
1 cup walnuts
1 cup hulled pumpkin seeds
1 cup olive oil
3 cloves garlic

Instructions
1.  Put everything but garlic cloves in food processor and blend on high constantly stopping to push down sides.
2.  Lastly add 3 cloves chopped garlic and blend together.
3.  Enjoy!
