Homemade Tartar Sauce

The easiest, and best, tartar sauce you can make!  Simply add the ingredients and enjoy with some pan fried fish.

Ingredients
1/2 cup mayonnaise
2 tbsp dill relish
1 tbsp lemon juice

Instructions
Mix together and enjoy!

Turkey or Chicken Enchiladas

Turkey Enchiladas

Far from your normal enchilada, these are baked to perfection in a deliciously creamy sauce and are great for any meal!  We often prepare these beforehand and bring them to share, because they can be kept in the fridge until ready to bake.  This is one of our favorite ways to use that extra turkey and they are great as leftovers, so be sure to make extra!

Bake Time: 45 min.
Ingredients
3 cups cooked chicken or turkey 
2 cups shredded cheese 
2 cans (small) of mild diced chiles 
16 oz sour cream 
2 cans cream of chicken soup 
10 tortillas 
1 chopped onion

Instructions
1.  Place a tsp. of chiles and a tbsp. onion in the middle of a tortilla.  To that add a good amount of chopped chicken or turkey and sprinkle with cheese to taste.  Roll the tortilla and place in greased deep dish baking pan.  Do this with remaining tortillas, placing them side by side, until pan is completely filled.
2.  In a bowl, mix sour cream, soup, and remaining chiles.  Pour over the entire dish and sprinkle the remaining cheese on top.
3.  Bake at 350 degrees for 45 minutes...Enjoy!

Baked Wild Rabbit or Squirrel

Do you like rabbit or squirrel hunting?  So do we!  We also enjoy baking them!  This recipe is so simple you won't even know your cooking.  Simply put everything together and leave it alone, as simple as that!  We only recommend you cook more than one...You're going to want it!

Bake Time: 4-6 hrs. approx.
Ingredients
1 Whole Rabbit or Squirrel
1 onion (chopped)
2 cups mushrooms (chopped)
1 can celery soup
1 cup water
1 tsp salt
1 tsp pepper
1 tsp powdered garlic
3 cloves chopped garlic
1 tbsp parsely
1 tsp paprika
1 tsp dill weed


Instructions
1.  Take rabbit or squirrel and place in a dutch oven with all ingredients
2.  Cover and bake at 275F for 4-6 hours or until the meat falls off the bone.
3.  Serve over noodles, rice or with pan fried potatoes.

Homemade Italian Sausage

Have a go at these easy Italian Sausages!  They couldn't be simpler, simply mix the ingredients, grind, and pack!  Cook them however you want or store them in the freezer to enjoy them the year round.

Ingredients

10 lbs venison
2 lbs pork (optional, it will make it a little dry)
5 tbsp salt
1 tbsp cracked fennel seeds
1 tbsp honey
2 tsp carrow seeds
2 tsp corase black pepper
2 tbsp crushed red pepper
2 cups water


Instructions
1.  Mix all ingredients.
2.  Run the mixture through a coarse disc grinder and package as fresh ground Italian Sausage.  It can also be packed into 35 millimeter casings.

This may be one of the easiest trout recipes around.  But simplicity doesn't make it not worth your while!  Try it out and we think you'll agree.

Ingredients
Trout (whole or fillets)
Teriyaki sauce

Instructions
1.  Soak trout overnight in teriyaki sauce in a sealed container.
2.  Cook on grill for approximately 20 minutes a side or until fish is flaky and tender.

Baked Fish Recipe

This is a great recipe for any white meat fish and makes a full meal.  Serve fish as is or over rice.

Ingredients
2 lbs of white meat fish fillets like bass, tilapia, walleye
1/4 cup olive oil or butter
1 cup chopped onions
1 tsp dill
1 tsp garlic powder
1 tsp parsley flakes
1 tsp seasoning salt
1/2 lbs shrimp


Instructions
1.  In a 9x13 baking dish layer fish.  
2.  Drizzle part of oil on top of first layer of fish.  Add another layer of fish and drizzle once more with olive oil or butter.
3.  Once all fish have been layered mix together remaining ingredients and cover in a layer over the fish fillets.
4.  Cover the pan with aluminum foil and bake at 325 F for 40 minutes.

Turkey Kabobs

Like grilling?  These turkey kabobs are amazing!  They are also easy to make and are easily taken out for a day of grilling outdoors!  Additionally you can add other vegetables, meat, or even fruit of your choice, be creative!  We've yet to hear anyone complain!

Ingredients
2 large turkey breasts
2 large onions
2-3 green peppers
portabella mushrooms (or morels if you are lucky enough to have them)cherry tomatoes


Instructions
1.  Cut breasts into 2 inch cubes
2.  Cut up and slice into wedges the onions, peppers, and mushrooms
3.  Alternate between meat and vegetables and put them onto skewers until full.
4.  Place skewers in shallow baking dish and cover with italian deressing  of your choice.  Marinate for at least 3 hrs.
5.  Warm grill.  Cook slowly approximately 10-12 minutes per side and until turkey is thorougly cooked.
Serve with rice.
